Buttermilk pancakes

Ingredients

2 cups self-raising flour

2 cups buttermilk

½ cup sugar

2 tsp baking powder

1 tsp salt

2 eggs

1 tsp baking soda

3 tbsp unsalted butter, melted

Olive oil

Method

In a bowl, beat the eggs, buttermilk and melted butter until frothy.

In a separate bowl, combine the dry ingredients together.

Add the two mixtures together and stir with a wooden spoon.

Heat a lightly greased frying pan over medium heat. Pour about 1/3 cup batter at a time into the pan and cook until both sides are golden brown.

Serve hot with yoghurt, fruit compote or your desired topping.
