Banana Fritters

Ingredients
- ½ cup premade Maxigenes Full Cream Milk Powder
- 4 overripe bananas
- 2 cups plain flour
- 2 tsp baking powder
- 1 tsp salt
- 2 eggs
- ½ tsp nutmeg
- Oil for frying
Method
- Peel the bananas and place in a large bowl. Mash the banana’s until it forms a paste like consistency.
- Add the remaining ingredients to the bowl, excluding the oil for frying. Mix until the batter is just combined.
- Place oil in a pan, approximately 7.5 cm deep, using a food thermometer heat the oil over high heat until 185 °C. Reduce the heat to medium to avoid burning.
- Place spoonful’s of the batter into the pan. Cook until fritters are golden brown, flip and cook until golden brown. Remove from oil, and place on a plate with a paper towel to absorb excess oil. Serve warm.
