Baked and Mashed Potato and Bacon

Ingredients
1kg potatoes peeled & chopped
30g butter
½ cup Maxigenes Full Cream Milk Powder- premade with hot water
1 cup bacon chopped
2 spring onions chopped
1 ½ cup grated cheese
Method
Preheat oven to 180 degress Celsius. Cook potatoes in a large saucepan with boiling water for approximately 20 minutes or until cooked through.
Drain water and mashed potatoes with butter and hot milk, set aside.
Add half bacon, spring onions and 1 cup cheese to potato mix. Mix until well combined.
Add potato mixture to a greased baking dish. Top with remaining bacon, spring onion and cheese.
Bake for approximately 40 minutes or until golden on top.
